Our final step in making our chocolate mousse is to whip our heavy cream. We're going to whip it until it holds soft peaks. Alright here's your heavy whipping cream with soft peaks. We're going to grab back our chocolate mixture and we're going to fold this cream, just like we did the egg whites, into our chocolate mixture. Same method, up and over using a large spatula and turning your bowl as you go. You want to keep blending until you see no more streaks and it just looks chocolaty and velvety. That looks good. We're now going to cover it and set it in the fridge for about an hour to chill."
