"Hi. I'm Judy Brosco on behalf of Expert Village and in this step I'm going to show you how to fold in egg whites into a recipe. So we had whipped up our egg whites until they were stiff and we have our chocolate mixture for our chocolate mousse that has come to room temperature. We're going to start using a large rubber spatula, a key tool for folding in egg whites. We're going to take about a third of those egg whites, whoops and get them into the bowl. And we're going to just start by running your spatula along the bottom and folding them over. Go down to the bottom and fold over. Bringing your ingredients up and over each other until they've completely incorporated. You want to be careful as so not to deflate your egg whites. We'll take another third and repeat. And we'll finish with the remaining. We have one more step to finish our chocolate mousse and that's going to be to whip our heavy cream and fold the heavy cream in. That'll be our next step."
