"My name is Brandon Sarkis on behalf of Expert Village and today I am going to show you how to roast a traditional Christmas duck with red currant jelly sauce. Something else that you can do is you can leave a lot of this on here and then you can just throw this in a pot, carcass and all, onions, just like this and add a little garlic, maybe some fresh oregano mind you, maybe some basil, thyme, rosemary, carrots, celery and have yourself an awesome duck soup. Now what we are going to do is take the tip of our knife here and go along the carcass, everywhere we see a piece of meat that we missed. This is if you didn't want to make soup from this, which I am not going to. I am a little duck souped out right now. We are not going to miss the onions inside because if you want you can cut them out and serve them but I wouldn't even bother. Now that is the carcass and now for these actual pieces like your wing and whatnot. I leave them whole because a lot of people just eat them off the bone. Now this makes great duck sandwiches, you can leave it out on a platter, with some fruit, with some horseradish sauce or some mustard. We also have some red currant jelly which I will show you here in a second. I am going to go wash my hand and I'll be right back. When it comes to service you can see I have taken some of the onions that we got from the inside and I'm just going to put a little bit of currant jelly in this small dish and I'm making a mess. That is hot, wow. Now I am saying this is what I would do and since I meant this for a small duck this is what I would do for just a couple of people. You can do just like a little tray here. Take some of that breast meat that we've got and lay it out on the side, there we go and if anyone was interested in a piece that was actually off the bone you could put one of these on there as well and then what you could do is serve it with a piece of bread on the side, you can serve it with mustard, you can serve it just like this or with a starch like a potato here. It is a really really easy dish to make but it just takes a while to cook and the good thing is that now you will have duck laying around and you can have duck sandwiches or you can make duck sausage with it by grinding it up. You can do all sorts of stuff with it. You can make soup, that's another good thing to do, by using that carcass. Anyway, hope you enjoyed my video.
