"Eating an egg a day does not impact the cholesterol particles in the blood most likely to cause heart disease, according to a new study. Egg protein is the highest quality food protein known. It is so nearly perfect, in fact, that it is the standard by which all other proteins are judged. It provides the essential amino acids that make eggs second only to mother's milk in human nutrition. Eggs come in lots of different colors and sizes. This is a large egg, and a large egg has about 75 calories and is pure protein. The egg shell may be white or brown or any shade in between. The color does not affect the freshness or quality of the egg, nor the taste. The color of the yoke is not that important to the freshness or quality, either. You can tell if an egg is very fresh if when you poach it or fry it, the yoke stands up in the pan instead of spreading out. But if you want to have hard boiled eggs, you might want to use eggs that are about a week old, because it makes it easier to peel them after cooking and cooling."
