"Hello, I'm Denise Bennett and I'm here on behalf of Expert Village. Almonds, I want to let you know that they're getting harder and harder to find raw, unfortunately, so you can just switch to a different nut. These actually are unpasteurized but it was hard to find them. Pasteurized obviously means that they've been heated and they no longer are raw. So, just some changes in the people that are providing our food and I don't think I should get into that. If you do have a problem digesting almonds, you can go ahead and soak those. First, drain off the water, only need a few hours and it'll make them easier for you to digest. Almonds also make a really nice milk if you're trying to get off of dairy and you're lactose intolerant, or you object to the treatment of the cows, which is kind of a problem whenever you get into mass production. Okay, we're almost there. As you can see, this is not finely chopped. Well, it's not going to be a blended, creamy sauce type. It will be more like a relish. We'll call it a pate. It will be a little bit on the chunky side. Okay."
