"One of the most important and overlooked steps about preparing rice is rinsing it rice is coated with a layer or gluttonies starch so if you don't rinse it before you end up cooking it the rice doesn't absorb the water as fully and it ends up being has a cruncher like more firm texture. So we want to create a really nice smooth light fluffy rice so we're going to rinse it first several times and until the glutton is off of the coating of the rice, and the water will run clear and then we'll cook it. We're going to rinse our rice about 5 or 6 times just to make sure the water runs clear once it's rinsed off the rice. So you want to fill your rice cooker with about an inch of water above the rice and then stir it so all the rice gets to the water kind of crumble it through your hands and you'll see the water be this really really milky color. So let that drain off and I like to pour my water in circularly so it continues to mix the rice. Each time you add water you want to get about an inch above the level of the rice stirring in a circular motion and you'll see it's still pretty milky. If you are using brown rice you won't have to rinse it as much because the brown rice naturally the coating is added through taking away the husk so in brown rice the husk is still on. So there's not much as glutton starched exposed then ideally once your done rinsing the rice and the water running off of it is clear you want to let the rice sit wet for about 5 minutes before you add the water and the coconut milk and put it in the rice cooker. That will help the rice begin to absorb the water more quickly so it will cook more quickly and more evenly so you see we're getting a little more clear and there you go. It's a step that will really help your rice cook evenly and help absorb the coconut milk more fully, we'll let this set for a few minutes and then we'll add our milk, water and put it in the rice cooker."
