"Alright we're going to make our coconut rice first you start with 1 cup coconut milk I use organic coconut milk just from a can I got mine from Trader Jill's. The coconut milk adds a sweet nutty coconut flavor to the rice and your going to add a 1 cup of water, I use a rice cooker for my rice you can use your on the stove but I find the rice cooker is a lot quicker, a little more efficient you don't have to mess with it all the time that when your cooking. So I use 1 1/2 cups of white rice, I use calrose rice which you can find it at any grocery store although I buy mine at monsieur market which is a Japanese specialty market and they also have lots of different kinds of Japanese jasmine and Arborio rice. I prefer using white rice for this dish instead of brown rice, brown rice has a bit more fiber but it also tends to over power the coconut flavor and it does take a little bit longer and acquires 1 1/4 cups of water instead of just a cup. And we'll be washing the rice next."
