Yeah, your hands will get a little bit sticky, but that's okay. I'm going to finish plating these up. Now, they're not quite ready to eat. I always find myself wanting to eat them right at this point. But if you can resist, you'll get them right to the right texture if you put them in the fridge just until they harden up a little bit, as little as 15 minutes, and then you're ready to go."
