"Hi this is Karen for Expert Village for we're going to sautee and brown our vegetables put 3 tablespoons of oil into your soup pot and add the onions the garlic the celery and the carrots and we're going to sautee and let that brown and caramelize up a little bit, before we add our lentils and seasonings and broth. So you can cook that on a medium to high heat and let that sit and brown for about 20 minutes okay our vegetables are lightly browned we have just sauted them for about 20 minutes. Now we're going to add our 6 cups of homemade stock our 1 cup of cleaned and rinsed lentils, 1 teaspoon of salt, 1/4 teaspoon of pepper, 1/2 teaspoon of oregano, and 2 bay leafs. Just stir that up and we're going to set it on medium high heat just to come to a boil as soon as it comes to a boil you'll turn the heat to low. Now it's very important that for a thick soup this is going to simmer for 1 hour and it's important to so that it won't stick or burn that you use a very heavy bottom pot, that you keep the heat low so the soup is just simmering. And you want to make sure that you stir it occasionally so that you want to keep checking on it and coming back and stirring it every once a while and adjust the heat if the heat seems a little to high, and if it feels the bottom of the soup is starting to stick a little then you'll turn the heat down a little bit lower. So but that's if the soup this will be for most soups with lagoons or like split pea soup you want to make sure that it does not stick to the bottom because once it sticks to the bottom it will burn and the flavor will be not so good."
