"Hi this is Karen for Expert Village our vegetable stock has been simmering for 2 to 3 hours and now we'll strain it just take a colander and fit it into a container or another pot and pour your vegetable stock and vegetables all into the colander. We'll squash those vegetables a little to get out as much juice as possibly can the vegetables we'll discard, but lets first just squash them down break them down even. They should be good and soft they've simmering for a long time we just want to do this to get it as much juice and that nice flavorful broth to use in our soups. It may be more than you need to make your soup and you just put the rest into some plastic containers and freeze it and you can use it for any other soup."
