"Hi this is Karen for Expert Village we're going to brown our onions our leaks our carrots in olive oil first take out a large stock pot and under a medium flame you want to heat that up a little and then add our olive oil, that's 2 tablespoons of olive oil. Then you add your onions and your leaks and your chop carrots and we'll stir that over a medium flame to brown it you want to be very careful not to burn it. If you see that it's browning to quickly you should turn down your flame a little bit but you want to brown that up a little bit caramelize the onions a little and caramelize the sugar and the carrots to bring out the flavor of the vegetables. To give us a nice rich vegetable stock so that will probably brown for about 20 minutes you should stir it occasionally to make sure it doesn't burn, so you can let it sit to brown and then come back and stir it occasionally and watch it so it doesn't burn."
