"Hi, my name is Lori Schneider with Figs Catering in Austin, Texas. On behalf of Expert Village today we are going to show you how to make roasted root vegetables. So it has been about 40 minutes. It has took about 10 minutes longer to cook our vegetables because our oven is a little bit older. So again, the way to find out if your vegetables are cooked or to make sure they are fork tender. Don't ever go by just times. So I'm going to pull my vegetables out. They look and smell amazing. Like I mentioned, one of the ways to check to make sure they are done is to make sure they are fork tender. I can easily pierce my fork through the butternut squash and I know it is ready to go. Now it is time to add our Italian parsley to our vegetables. "
