Hi, my name is Lori Schneider with Figs Catering in Austin, Texas. On behalf of Expert Village today we are going to show you how to make roasted root vegetables. So now that we have cleaned and peeled our parsnips we are going to go ahead and dice them and get them into the pan with our butternut squash. As you can see our parsnips are much bigger on one side than the other. So the key is to really make sure that we get all the pieces about the same size, bite size and that way they all cook at the same temperature. Excuse me at the same rate. So my first step I'm just going to cut down the very center of the parsnip and be careful cause it is a hard vegetable. Just like so and I'm going to run my knife down the length of the parsnip. As I get on top of the parsnips my slices are going to become a little bit thinner and again that is just to make sure that cooks at the same temperature. So I got thinner slices but they are a little bit bigger and over here they are a little bit bigger slices. So we add that to our butternut squash. I got one more to peel so I'm going to slice again right down the middle and slice down the length of the parsnips. Now we are going to add that to our butternut squash and we would be ready to add our next vegetable.
