"Hi, my name is Lori Schneider with Figs Catering in Austin, Texas. On behalf of Expert Village today we are going to show you how to make roasted root vegetables. So our next ingredients we are going to add to our sheet pan are the parsnips. These parsnips are really, really great. If you have never had them before I would encourage you to try them. They are in the carrot family obviously cause they look like white carrots but they are really sweet, they got a really sweet unique flavors. So definitely try and you actually just really treat them just like carrots so we have cut off the top here. I'm removing the out skin with the vegetable peeler, just flip it on over and get the other side. This is another fall dish or excuse me another fall vegetable. So you would see them in the fall time typically. Again if you can not find them in your area don't worry about it just leave this ingredient out or if you really don't care for parsnips you can leave this ingredient out. Well I am almost done with that you can cut off the very end and you can see it is a little dry. This is what our clean parsnips will look like. "
