Hi, my name is Lori Schneider with Figs Catering in Austin, Texas. On behalf of Expert Village today we are going to show you how to make roasted root vegetables. After I cleaned and peeled my butternut squash now we are going to go ahead and dice it. To do this I'm going to lay if flat so it is easy to work with. With my knife I'm just going to go through and make big slices down the length of my butternut squash. Okay perfect! I'm going to set some of it to the side so we can cup the squash in pieces here. Now from here I'm just going to cut through and be careful, actually I'm going to be very careful and I'm just going to do 2. Cause it is very slippery. It is a sweeter squash so keep that in mind it does move around a little bit on you. Be very careful. I'm just going to add that to my sheet pan here. You just want to make yours cut about bit size. You don't want to make them too big cause you want to make sure that everything kind of runs together and it is about the same size. That is will cook evenly. Like I said if you have other kinds of squash that you want to play with and experiment with this would be a really great opportunity to do so. There is other vegetables that you can add to this dish like rutabaga, turnips, other root vegetables. Just find what is fresh and local in your area and you can use this base recipe to create your own roasting vegetables. This is our last section here. Now we are ready to move on to our next step.
