"Hi my name is Lori Schneider with Figs Catering in Austin, TX on behalf of Expert Village today we're going to show you how to make roasted root vegetables. So now that I removed the seeds from my butternut squash, what I want to do is go ahead and clean it and peel it. I'm going to flip my butternut squash over. I've got a flat surface to work with. With my knife, I'm going to remove this root end here by just simply slicing it off, setting it aside and I'm going to remove the stem root here. Now that I've got a flat surface for me to work with here, I'm just going to take my vegetable peeler the skin actually and the skin is actually, you can tell here the skin on the butternut squash is pretty thin. It's not very thick skin so it's very easy to use your vegetable peeler. You can see it comes off very easy. If you don't want to use a vegetable peeler, you can also use just a plain knife to get rid of the skin. So we're just going to kind of come across here. Now that I have that done, I'm going to go ahead and get the bottom of it. It's a little more work because it's a little hard to work around it. I kind of like to go around the side. Butternut squash is a really great vegetable to use in the fall just because it has a great flavor and it's so pretty. It has pretty fall colors. So if you never used it before I definitely urge you guys to give it a try. If you don't have butternut squash in your area, you can use a variety of other squash in this dish. You can use acorn squash, pumpkin. So have fun and play with few different squash. That is how you clean and peel your butternut squash."
