"Hi, my name is Lori Schneider with Figs Catering in Austin, TX on behalf of Expert Village today we're going to show you how to make roasted root vegetables. So our first step in making our roasted root vegetables is to start off with a butternut squash. Here, I've got a pretty decent size butternut squash and since we're making this dish for about 4 people, we are just going to use about half of this. To start this I'm going to take my knife and just kind of push it through the middle of the squash. You want to be very careful. Butternut squash is a very hard squash so you want to make sure that you have a very sturdy surface to work with, as well a very sharp knife. You can see here I'm just pushing through the butternut squash. What I'm going to do is, very carefully, I'm going to pull my knife out of the squash and I'm going to go through the other direction. A lot of times too, in the grocery store you can find butternut squash already peeled in cubes so keep that in mind if you are trying to save a little bit of time in making this meal. So as you can see here, this is a beautiful butternut squash. Butternut squash is particularly very popular in the fall time. It is fall right now so we're going to go ahead and make this dish. My next step is to go ahead and remove the seeds from the squash. To do that all I'm going to do is take my spoon. I'm going to scoop out those seeds. Pop those seeds into a bowl. You can actually save these seeds, roast them and eat them later if you like. That is how you half and seed a butternut squash."
