"Hi, my name is Lori Schneider with Figs Catering in Austin, TX on behalf of Expert Village. Today we're going to show you how to make roasted root vegetables. I've been in the culinary industry for over 13 years and I have the opportunity to work in everything from restaurants to high end resorts. Over the years we had the opportunity to make many dishes and one of my favorite dishes that we made in the fall time is roasted root vegetables dish that we are making today. Today our roasted root vegetables include parsnips, carrots, butternut squash, red onions and a lot of different fresh herbs in aromatics. It is really one of my favorite dishes to make around the fall times, because not only it looks like a fall dish but it taste like a fall dish. Because the squashes are so nice and flavorful around this time of the year. It's also very unique because you can add in different veggies based on what you like or what you don't like. So have fun and make it your own."
