"Aloha, this is Sonia Martinez from the big island of Hawaii on behalf of Expert Village. We're here at the farmer's market in Hilo looking for the mangos that we're going to be using for our lassi today. In Hawaii, we have quite a few different varieties of mangos. All over the world there are four hundred different varieties of mangos and they all have different properties such as colors, textures, sizes and some can be eaten out of my hand, some will just need to be used for cooking and others you don't want to even eat at all because they taste like resin. When choosing a mango you have to make sure it's ripe, it has to slightly give a little bit but smooth. The skin, you don't want it to be wrinkled in any way. Mangos can be ripe with red or with yellow, some of them are ripe even green. It just depends on smelling the skin, how it feels in your hand. The main thing is, you see this one if very nice and ripe, it has a wonderful odor. Look at this beautiful mango. These are grown in Hawaii and they are the Tommy Atkins which is a very sweet mango. Normally not fibrous and we will be picking up these to use in our lassi today. Oh, it's kind of hard to decide, they're gorgeous."
