"Okay, we're talking about cupping tea, and we're at the step where we actually get to take a full drink of the tea. And the first thing you're going to look for when you take a drink of the tea, is briskness. Now, yeah, briskness is not something in the tea world you're associating with cold or some of those other settings where you may have used the word brisk to describe something you're feeling. When we talk about briskness with tea, what we mean is sort of a slightly astringent quality, almost a bitterness to the tea. It's kind of the tea's bite, and it'll probably get you in the back of the tongue where you taste bitter type of flavors.
