"Hi, I'd like to talk with you about pairing wine and cheese. And let's talk about provolone and mozzarella, two of Italy's most popular cheeses and some of the most popular cheeses all over the world. Provolone and mozzarella are a bit unique in that they both have very mild flavors, with maybe a little bit of kind of nuttiness or spicy to them, spiciness to them. But they also have a nice thick texture and lots of thick proteins in them, which make them kind of coat your mouth a tad. The reason this is such an interesting combination is cheese, in cheese is that it makes for a mild light cheese that can stand up very well to a red wine. As a matter of fact, this is the ideal pairing of cheese and red wine. Try just about any red wine there is, from a Cabernet Savignon to a Merlot or a Malbec. Or, if you'd like to try the traditional pairing, you can try an Italian red wine. This is kind of the idea between lots and lots of food and wine pairings, including Italian food and Italian wine. Most of those foods contain mozzarella or provolone, which makes a perfect bridge to the red wines of Italy. Try a Sangiovese a Nebbiolo or Barbera or, of course, Italy's most famous red wine, Chianti. It really does go well with provolone or mozzarella."
