"Hi, I'd like to talk to you about pairing wine and cheese. This time were going to talk about what we call firm cheeses. Firm cheeses are aged from anywhere from two to eighteen months, they lose some of their moisture and firms up their texture. Firm cheeses include manchego, swiss and emmenthaler. These are some of the best food and wine pairings in the world. But what you want to do is make sure that you pair these cheeses with a full bodied white wine. Red wines will overpower the mild nutty flavor and the white wine will just shine with the cheese's flavors a tad more. The perfect white wines for a firm cheese match are Chardonnay, Pinot Grigio, Viogner or Sauvignon Blanc. You can also try one of the more unique white wines from around the world. For instance, white Bourdeux, which is a blend of Sangiovese and Sauvignon Blanc in a nice firm style. Or a white Rioja, which is usually overpowered by it's cousin the red Rioja but will make a great match in this case. For my perfect firm cheese and white wine match, use a manchego cheese and a white Rioja, which is also some of Spain's finest wine and cheese. Give that a try."
