"Hi, I'd like to talk to you about pairing wine and cheese. I'd like to talk to you about a type of cheese that we call semi-firm cheeses. And these are cheeses that you might know by the name of munster or muenster, gouda or alga Havarti or monterey jack. These cheeses are aged for a short period of time giving them a nice kind of toothsome texture to them and a mild sometimes nutty flavor. These cheeses go well with a variety of different wines due to their nice texture and mild flavor. The best wines, white wines to serve with these cheeses are full bodied white wines. The white wines can stand up to the flavor of the cheese and they make a nice match. Good white wines include Chardonnay, Sauvignon Blanc, Pinot Grigio and Viognier. They'll make a wonderful match. If you'd like to match a red wine with a semi-firm cheese, make sure you stick to the lighter type of red wines because we don't want the red wines flavor to over power the cheese. Stick to a nice Dolcetta or a Barbera from Italy. Or you can try a Merlot, a Pinot Noir or a Boujelet. They'll all make a wonderful match without overpowering the wine, the cheeses flavor. Enjoy."
