"I'm going to tell you about pairing wines with goat cheeses. You may know goat cheese through its name chevre, mon rocher or vacheran. These same rules also apply to what we call brine cheeses, which are cheeses that are stored in salt water, like feta. The rules for brine cheese and goat cheeses are very easy. Pair goat cheese and brine cheese with high acid white wine. There's no way around that. Goat cheese and brine cheese is very tangy. It can be quite salty. And it can have an intense flavor. The tang of the cheese and the saltiness of it requires a high acid white wine as it would clash with a red wine or other type of wine. The perfect wine for pairing with goat cheese is reisling or sauvignon blanc. Maybe a light chardonnay or try one of the many regional white wines from Italy, Hungary or Greece. Wines like Fiano, Vernaccia or Vermencia. You might not be able to pronounce them, but they'll go very, very well with goat cheeses."
