"I would like to tell you a little bit about sherry. Now sherry is one of those wines that has been imitated and copied the World over. The name used a lot on a lot of different styles of wine. But, real sherry comes from one place in the world only. That is the region known as Hedez in Spain. It's also known as Zedez or the English translation is Sherry. Sherry is a fortified wine, made from white grapes grown in the region. These grapes can be very acidic and flavorful. They are fermented to dryness and then they put in a series of barrels, called a Solara System. It's in the series of barrels called the Solara System that this plain white wine is transformed into the delicious wine we know as sherry. The wine rests there for many, many years in oak barrels outside. It's progressively blended and aged by mixing the newer wines into the older wines. The wine is allowed to oxidize or allow a little bit of oxygen to be absorbed into the wine. Which gives sherry it's unique, rather pungent, spicy and woodsy aroma. Sherry can be dry or sweet and is known by varieties of different names like Oloroso, Amontillado and cream sherry. It's one of Spain's national specialties and goes well with an amazing amount of food. If you would like to try a really interesting food and wine combination, try a nice manchego cheese, olives or some sort of tapas with any of the different styles of sherry that are out on the market. You will enjoy it."
