"Hi I'm going to tell you about the special way to taste a glass of bubbly. Now bubbly is a sparkling wine that's very unique. Actually you don't taste bubbly like you do other wines. It's little bit more refreshing, it's little bit more complex than some other wines. So what you need to do is take one little sip of bubbly. Ah! And you should notice that you're immediately very refreshed and very cooled off. And one thing you should really notice with your first sip of bubbly is a very strong amount of acidity. Actually it's called a tart attack. A very tart and attack means the first few seconds of a wine on your palate. So we have a tart attack, your first taste is very, very acidic. And if you think you don't like champagne or if you think you don't like bubbly, it's probably because you're just paying attention to the very, very acidic first impression that you get. However, this is one of the amazing things about a sparkling wine, it will come off very acidic, which is almost kind of cleans your palate, and make your palate feel refreshed. But wait just a second, after you swallow that first taste of bubbly, draw your attention to your palate and just kind of relax and you'll notice that the acidity goes a ways almost immediately. Before you swallow and exhale, the acidity is gone. And that's very unique in wine. And it's very unique in food also. Usually when you taste wine the acidity hangs on and it's one of the last impressions to last on your palate. But with the sparkling wine, the acidity will go away and that is called a soft-finished, and it?s very unique to wine. And in basically it?s called tart attack, soft-finished and give it a try. I'm going to give it one more try and I?ll tell you. Very acidic at first, almost taste kind of like a nice grown up lemonade and then by the time I swallow it and exhale the acidity is gone and its just round and smooth and everybody feels better, including myself."
