"Hi I'm going to show you how to pour a glass of bubbly. Now first of all once we got the bottle open, what you want to do is you want to make very certain that you serve all the ladies present first. This is a point of etiquette or course but very important with bubbly. So gentlemen, you just have to wait for yours. You can pour each ladies glass of wine once or twice, go around the room to pour the ladies and then you go around and pour the gentlemen's glasses. Now few things about bubbly that are different than other wine. You always want to leave the glass on the table. And you want to pour about a tablespoon or two into the glass. This is called priming the glass. You going to notice that the wine is going to hit the bottom of the glass and foam up and we don't want to waste any, we don't want to foam them over. So prime the glass, pour about a tablespoon or two into the bottom of the glass, let it foam up and let it settle back down. Then, pour a little bit more. You could pour up about half of the glass, it will rise up to the top and settle back down. You can do one person's glass at a time or do all the ladies priming the glass and go back and top all the ladies glasses off and then start with the other people. Another thing about pouring bubbly wine is, unlike other wines where you always want to keep the wine glass full, you always want your customers or your friends to finish a glass of bubbly before you refill it. That's because bubbly should always be enjoyed cold. So you pour one glass of bubbly for everyone, put the wine in an ice bucket and when someone absolutely drains their glass, go and pour another. You don't want to be pouring cold bubbly in the lukewarm bubbly, that way no one gets to drink their bubbly the way it should be which is ice cold."
