"Okay on the side of the machine is where the actual power switch is. It turns the machine on and off and almost one of the most important features of the machine is our gas control valve. This is how I actually control the heat and make sure the beans are roasted at the proper temperature so that we get again the best flavors we can get out of them. Once I've dropped the roast, the beans are now hot, still cooking, hot oil is on them, caramelized sugar is on them, they come down into this cooling tray and the stirrer keep stirring around and it cools the beans. What we need done when we drop a roast, is we need the beans to cool as fast as possible so they will stop cooking. I drop them when I thought it was right, I don't want to keep cooking the so I drop them in the cooling tray and the stirrer goes around and it cools them off to the point where we can drop them and get them ready to bag and ship them."
