"On behalf of expertvillage.com, my name is Dean Forrest with Sedona Coffee Roasters. I am here to tell you about roasting coffee. The Probat L12, we start every roast by pouring beans into this hopper. L12 means 12 kilos and will hold a little over 25-26 pounds. When I roast I use 20 pounds at a time just to not max the machine out. But once I put them in here, I can make sure I've got beans in there as my temperature is coming up. What I am looking for once I put beans in there and getting ready to roast, I wait for the machine to get up to temperature. As the machine gets up to temperature, this thermostat will tell me where we are; the air temperature inside the roasting drum. When it reaches this certain point what we call a charge temperature, I call it a drop temp, but when it reaches that point, I am going to lift this lever. The beans go down through the shoot and go down into this roasting drum. "
