"Hi! I'm Terri Turco with Expert Village and now we're moving on with the fabulous biscotti. We've melted our butter, put our sugar in, and also put in the all important 3 eggs. Now we're getting to the nitty gritty. We're going to put in baking powder, which is 2 teaspoons. Make sure when you're measuring your teaspoons on your baking powder that they are level. What baking powder really does is it really acts as an agent to really make the biscotti rise. Then you're going to want to add a whopping one tablespoon of whatever extract you've decided to use. Since I'm making almond biscotti, I'm putting in almond extract. One tablespoon may seem like a lot, but it really gives a very intense flavor after you're done baking them and when you dunk it in your coffee. Last but not least, we're going to add about 2 cups of flour. When you integrate your flour, what you want to do is you want to pour it in slowly and then stir it with a spoon. You notice that I'm not using a whisk anymore, because the whisk is going to get a little bit clumpy with all the flour."

on 2/20/2009 terri, i got down to the nitty gritty.......but i did see baking soda on your table......arm and hammer!!!!I thought i was going nuts....
and then you changed it to .....a round canister of baking powder......
