"Hi! My name is Stephanie Barnett and on behalf of Expert Village, I am here to show you how to make a pumpkin pie. The timer has gone off and we are now going to take our toppings out of the oven. They are perfectly golden brown. You are going to want to take them off the silpat. You can use your hands if you are really brave. You are going to put them onto a cooling rack. This will help them from getting soggy and over cooked on the baking sheet. You want to allow the air to circulate around them because if you put them just on a glass pan or a plate, there will be condensation on each little decoration and it will cause the dough to get soggy. If you have a pie crust shield, it is a good idea to put it around your pie crust because it has gotten very crisp at 425 degree temperature. Slide it back into the oven. If you do not have a pie shield, you can take a piece of foil and crinkly up the same sheet as your rim of your pie pan and carefully lay it on top of the crust of your pie pan when you change the temperature. That will keep the crust from burning. "
