"Hi, my name is Stephanie Barnett and on behalf of Expert Village I'm here to show you how to make a pumpkin pie. Your next step is to pour water into the flour. Remember, cold water. You want your ingredients cold so you'll have a flaky pie crust. This is very important. Also, less water than more water. If it's a humid day, you may need less water, air on the side of less rather than more. You'll pour three tablespoons of water in, one, two, three. Then mix with a fork and the dough should come together. If the dough is not coming together, you can add a little bit of more water, but only half of teaspoon at a time. You want the dough to grab into a consistency of a ball. It can still be kind of flaky in your bowl, but once you push it together it should form a ball. Again, you don't want to handle it too much, you'll take the ball, put it on a piece of wax paper. You'll flatten it with your hand into a disc and the reason you do this is it makes it easier to roll out later after it's chilled. You'll fold up the wax paper and you'll put this in the refrigerator. It's very important that the dough is chilled for at least an hour. I prefer three hours, it could be up to one day. If you leave the dough in the refrigerator for three days and you forget about it, you need to make new dough."
