"Hi I'm Sarah Darley with Sarah-Bear's Cheesecakes for Expert Village. In this segment, we're just going to talk about different flavors of cheesecake that you can make. It's really up to you. You can use your imagination to whatever kind of cheesecake you want to make. I've set out a couple of different types of chocolate chips here. And, when you go to the store in the baking aisle, they have shelves of different chip flavors that you could use so just let your imagination go. I like to use the chocolate mint ones and make a mint chocolate cheesecake around Christmas time. You can top it with some mint or crushed up candy canes on top. And it's pretty festive. Another thing you can do without using the chips is to use some sort of a paste or jelly like we did with the raspberry. Instead of using raspberry, you can use a cranberry sauce at Thanksgiving. Or I like to make the pumpkin cheesecake. So you would just substitute the raspberry jam for the either the cranberry or the pumpkin. You can do a layer with cinnamon chips in it or a layer with white chocolate with the pumpkin. Basically, any of the recipes that I have shown you, you can substitute different flavors of chips, different types of fruit. Like, instead of the apples, you can use peaches or blueberries. Anything that is in a paste form you can use, even applesauce. You could use that instead of the raspberry jam. Another thing you can do that I didn't really show you is if you'd rather just put chips in without melting them, you could make a plain cheesecake and then just sprinkle the chips in. They will stay in chip form, so they won't disperse throughout so if you want to do that you'll have to mix them in a lot. I would mix half a bag to a bag of them in to get the flavor really into them. Other than that, you can use anything. Whatever you can think of. Just let your imagination roam. Most flavors are out. Like I said, anything is possible. With the chocolate peanut butter. Anything like that. Just think of the season or the time of year that you're making it for. If you're doing it for a birthday, or something like that, just take into consideration what the person likes and you can probably make it."

on 1/28/2009 i really appreciate sarah metioning the idea of seasonal cheesecakes. i like to use fresh fruit in season, whether for a base or topping.it brings a really fresh and light element to an already heavy desset.(vjs)
