"Hi. I'm Sara Darley with Sar-Bear's Cheesecakes for Expert Village. In this segment we're going to talk about how to get your cheesecake ready to put the topping on. After its baked for about, between forty five minutes to an hour, you want to just keep checking on it, like I said. And you'll notice that it'll get this nice golden brown color and it will start to crack. Now just cheesecake's been sitting out for a bit so its settled. But when you pull it out it'll be probably a little more puffy than this. And the cracks will be a little deeper, but as you can see, as it cools down they kind of mend themselves back together. So before you can put any sort of topping on this you're going to need to set it out some place cool or room temperature for at least an hour. If you don't need your cheesecake for whatever you're baking it for until the next day you can put it in the fridge or leave it on the counter overnight even. Because that's going to help it to settle and cheesecakes are pretty dense so when they are up and like up kind of warm they are really fluffy . You can't put any topping on them because the topping, itself, like a chocolate topping will harden back up 'cause of the temperature of the cheesecake. So you need to make sure that its cooled off enough for the topping to be able to harden back up."
