"Hi, I'm Sarah Darley with Sar-Bears's Cheesecakes for Expert Village. In this clip we're going to talk about what type of pan to use when making a cheesecake. Any type of cheesecake you want to make you're going to use a spring form pan. There's a lot of different sizes of spring form?s, but typically use a nine inch round spring form pan and the reason we use a spring form pan is because it has a latch on it so after the cheesecake is made you can just take the sides off and leave the bottom on so that you're cheesecake won't crumble and you can cut even slices of it. Other than round spring form pans, they offer different sizes of even square spring form pans. This is a regular full size cake pan that's a spring form, but to use this for a cheesecake you could just double your recipe and make a double size cheesecake so that you can take the edge of this one off as well. Also, rather than the first spring form I showed you was a little deeper edge, some of them are a little bit smaller, like small around the edges and wider around or there's even smaller round ones just to make a little cheesecake. You can get square ones in these sizes also. So it's just really whatever you prefer to make your cheesecake in."
