" On behalf of expertvillage.com, I’m Liz Muller, and today I’m going to teach you how to make a delicious beautiful cheesecake flan. We’re making the sugar caramelized. So we have it on the stove on medium heat. As you notice, I’m stirring it stirring it so it doesn’t stick. Okay, we want it to be a golden brown. Continue to stir it, you don’t want to keep it on the stove too long because then what happens is it turns really really dark and it becomes bitter. That’s something that’s very important. Don’t keep it on too long, you don’t want it to be bitter, you want it to be just right, just sweet. You want a golden brown. Lift up your spoon like this and just watch it turn golden brown, a little bit browner than that. I’m going to show you how to put this in the pan as soon as I can any minute now."
