"Hi, I'm Karen for Expert Village. Let me show you the dough again. You see that it is gathering up in a ball. It is still a little bit to sticky so I'm going to ad a little flour at a time while we are mixing it up. Until I get a nice smooth satiny dough. (mixing the dough) Just pushing the dough, kneading it a little bit of the flour that is in the bottom of the bowl. Then I would start it up again. You just want to let that knead for a while until it becomes smooth and satiny. That has been kneading for about five minutes and I'm going to take the paddle out so you can see the dough is nice and smooth. You see that it is cleaned to the sides of the bowl. It is a little bit of sticky dough on the side but it is mostly dry. When you put that into a nice ball, a little bit of flour into my hand so it does not stick. But that is a nice dough like that nice and soft and elasticy. It should pull like that and be firm. Now I have not use all of my flour and don't worry about not using all of your flour. You are really more concerned with the consistency of the dough. Now we are going to take our bowl and I"m just going to spray a plastic container or bowl, or glass bowl anything that you want with a little bit of oil. You can also just rub a little bit of oil on the bowl. You don't have to use the pan spray and you put it in and flip it over so it is lightly coated with oil all around. Then we can lightly cover that and we would set that aside. We would set that aside for about a hour until it doubles in bulk. You can also set this aside in the refrigerator and let it rise over night so it is ready in the morning or later on in the afternoon. "
