"Hi, I'm Karen for Expert Village. The perfect compliment for Chanukah's is potato pancakes is homemade apple sauce. I would show you how to make some really quick apple sauce right now. All you need for homemade apple sauce is an assortment of apple, a nice pot with a heavy bottom so you don't burn your apple sauce. A little bit of water and cinnamon. So all you need to do is cut and peel your apples. I like to do it like this, I like to quarter them and then just one by one peel the quarters and seed them at the same time. Now they have all kinds of fancy peelers and cores that we can use and you just figure out what works good for you. Now there is all kinds of apples you have to experiment with what is in your local market. Some apples are drier and they can cook for a long time to hold it's shape. Other apples dissolve as they cook and they turn into be sauce. I like to use a variety of apples so that I have a little bit of mix. I have some that are sweet and soupy and some that have little chunks so I would have some nice clumpy apple sauces. Then everyone knows that it is homemade. So we just do/come peel a bunch of these apples and place it in our pot and then we would just let that slow simmer for about a hour. Keeping a eye on it for it not to burn and then we would have some delicious apple sauce to go with our Chanukah's. "
