"Hi I'm Karen for Expert Village. Now we're going to grate our potatoes. Remember that we grated our onions in the food processor and I just left the onion right in there and now I'm going to add the potatoes to the top and we'll grate the potatoes right into the onions. Remember if your potatoes are to large for the feed tube you can simply cut them down a little, make them fit. You do want to work fairly quickly when you're doing the potatoes because the potatoes can brown and you want to avoid that browning or sometimes it's even a very gray color. There's all kinds of different potatoes. Some are a little drier, some are more wet. I find the best thing to do after you've grated your potato and onion, put it into a colander and we're just going to squeeze. We're going to mix the onion in with the potato and squeeze out a lot of the liquids from the potatoes. I'm also going to put into the food processor the regular blade so that we can mix our batter, our egg and flour. I'm going to mix up the onion with the potato because the onion will help protect the potato from turning gray or brown. Then I'm going to squeeze that mixture and try to get as much liquid out of those potatoes, get them to dry out a bit. If your potatoes are very wet and you don't squeeze the grated potatoes out, you can have a very wet, sloppy batter and it's a lot harder to make the pancakes. Look at all the liquid that came out of those potatoes. You see also on the bottom you see some potato starch. So we'll let that sit."
