"Hi, I'm Karen for Expert Village. Okay, we're going to start by preparing our onion. I'm just going to remove the skin, just take off the top of that and take off the little root section. I also have a trash bag set up here that I can just throw my skins and peels right into. Peel that outer tough piece of onion skin off the outside. Now the most difficult part of one of the problems that people have when they're making latkes is that the potatoes brown after you grate them. So you really do want to make this batter, the grated potato batter quickly, and I find that it helps to grate the onion in first and mix the potato with the onion. The onion juices helps to keep the potato from browning. So I'm just going to quarter this onion and put it into the food processor. I have it fitted with a grating blade. You can also use a regular blade and just puree that onion if you want, and we're going to grate that all up. "
