"Hi, my name is Kip. I'm here on behalf of Expert Village. Today we're making chocolate crackle top cookies. Now that our dough is in the refrigerator and cooling, let's get our baking sheets ready. While our dough is in the refrigerator,; it's time to go ahead and grease our pan. If you have a large pan you might be able to get away with one you probably need two pans. This is a little larger than what you would normally find but it's not nearly as large as what we would do. So it may be disturbing to see that I'm using my hands to do this but it's a lot easier than using a piece of paper towel like most people do in their homes. This is how we would do it in the commercial bakery of course we would use clean hands and then we're going to bake this stuff at 350 degrees. So if that scares you, we're going to kill any germs that might of been there but this is a lot of hand work that goes into baking. So go ahead grease up two of your pans. I use a little Crisco for these cookies sometimes you can use a little cooking spray but I like the Crisco."
