"Now while my cream and my butter are on the stove and they're melting together and coming to a low boil, I'm going to get my chocolate ready. I decide to shave the chocolate. I've seen people just kind of, you know, mash it up and make it into chunks. But I've found that the smaller the pieces, or the shavings, the easier and the faster the chocolate's going to melt, and the less heat you have to put on it later to melt the chocolate. You don't want to have to put chocolate on heat, or over heat for too long because it gets very tempermental. And so the more we can shave it down now and melt this with our hot cream and butter, the better it's going to be, and the less heat we have to use later. So, I've already started shaving some of this, I'm just going to dump this in my bowl. This is roughly eight ounces of chocolate that I have here. Well in there's probably about three, three and a half. You know, when you want to shave your chocolate, watch your fingers, just get a nice big knife, and your just going down the side of it. You don't have to, it's really not hard, there's not a science to it, just shave down the side of it. You'll get you hands a little bit chocolatey but I've never heard anyone complain about that. Shave down the side or it, make it as small as you can. If you have a couple of chunks in there, you know, chop them up. It's not a big deal. And then we are going to be adding a second source of heat in a minute. So, you know, if it's not all completely melted this first time around, that's okay. But just the smaller the better. "
