"I want this cake to be perfectly flat. I'm looking at it now and I see that it's dipped in the middle and a little high in the corners, so I'm going to put it back in the pan. I put a piece of paper on there to make it easy to get back out when I want it out. I'm going to flip it over. I'm going to trim those high spots with a nice sharp serrated knife and saw back and forth. Just remove those pieces. If you get down even with the cake, you can kind of see the peaks and just take them off. Let me look again. That looks pretty good. A little bit more off here. Now we'll put our tray back on and we'll just flip it over. That comes right off. That's a lot better. I'm looking at my cake and I see that it's a little flared on the sides. I want to make that nice and straight. I'm going to take my serrated knife again and go straight up and down. Just trim that cake so it's straight up and down. Not taking off that much as you can see. On the long side. Just taking off that little flare. Make it a little easier for us to frost it. Make sure that it's exactly perpendicular. This it will give it that nice squared off look. Saw that knife back and forth so you don't rip the cake off. Just cut it off nice and even. I'll put those pieces aside. I think I'll just get the crumbs off my top. Center the cake nicely. If you see that your cake is slipping around on the pan, you can take a little bit of frosting and just slip it under there like glue."
