"Before we start our trimming, we're going to clean up our platter of all this excess frosting. You want to take a paper napkin or paper towel and just kind of wrap it onto your finger like that, and just rub along and remove as much of that excess frosting without damaging the side of the cake. Once you get one stroke then you can tuck that back inside and find a clean spot. Once it gets messy, you just keep cleaning it off, turning it to the clean side, and use a different napkin because you don't want to move any clumps from one side to the other. And we'll just clean that the best we can all the way around. Remember we will be putting a little bit of a trim there so it will hide some of that but you don't want it too messy to start with."
