"Now we're going to frost the top of the cake and we're going to... you want to use a lot of frosting like this. And we're also going to use the frosting after we get the whole thing covered; we're going to use the frosting as part of our design. So just put your frosting on, come right up to that edge. Use a lot of frosting in a nice spreading motion. And frost that whole top of the cake. Make sure it's nice and thick, and you can always come back and take some off. When you're frosting, you spread from edge to edge like this with the spatula. Now I have the whole cake coded, I have the sides and the top. Now I'm just going to smooth things out. You want to go around one more time around the side following the contours of our cake. Now remember you want, the spatula should be straight up and down so that you get a nice straight edge. And just smooth that around and take off any extra icing or anything globby, and make that nice and smooth all around. Nice and slow. Now don't worry about this here. At the end we'll just clean that up. So at this time you don't want to worry about that. Now we'll trim the top. You want to clean off your spatula so it's pretty clean. And then to get this edge, if you've got a little bit of a... you still have that clumped-up frosting there. You just take and kind of with a rounded motion, just carefully smooth over that edge into the top. Cleaning off your spatula each time. So it's kind of a rounded motion. You just want to just start like this, and then just lightly pull that side frosting up and over to the top, smoothing out the top. You want to just gently smooth that over. That's that edge that we had. You want to smooth that over the top and clean off your spatula each time. Now we're going to use our spatula to kind of add some detail to our cake. Our face, for our bear, is round like this. So you want to take your spatula and just make that round. Just spread in sort of a oval motion like that. And then the ears, you want to spread. Just the one swoosh to spread and give the ears some shape. And then the paws of our bear are going to come down like this. So we're just taking our spatula and giving it some shape and giving it some detail by spreading the frosting. And that's what your cake should look like at this point."
