"Now I'm going to show you how to prepare and color our fondant. Before you roll your fondant, you need to prepare it. It comes like this, it looks a little bit crumbly. It's still soft and, if you take it off in pieces just a handful like this, we'll knead it until it's smooth. Now, you want to grease your hands with a little bit of shortening or margarine, just a light coating on your hands and that will keep the fondant from sticking to you. And just start by squeezing it into a long piece and then you fold it in half and continue squeezing and fold it in half. And then when it begins to soften up, you'll roll it like this. You want to roll it and then fold it. And continue to roll it and fold it and that will stretch it and soften it. And you keep doing this until you don't get this, you know, until it's smooth and it doesn't look crumbly at all. And then we'll add a little bit of color to that. You want to use paste colors when you add color to the fondant. The watery colors that you get in the supermarket will water down and make the fondant too soft and it doesn't give a nice intense color. So you want to look for those paste colors. Now, if it becomes sticky in your hands while you're working with it, you just take a little bit more either margarine or shortening and, again, grease your hands and continue."
