"Hi! I'm Jennifer Cail and on behalf of Expert Village, I am going to show you how to make this delicious sweet and refreshing pumpkin ice cream. Now that I've got my five yolks separated, it is time to add some of the other ingredients. The first one is going to be a quarter cup of dark brown sugar. You want to use dark brown instead of light brown sugar to get a stronger taste. Now one of the things that you might have to worry about is if you go to the grocery store and you end up with a solid lump of sugar. What do you do? If it is in a box with a wax wrapper, you can stick the whole box in the microwave for just 10 seconds and then it comes out and it is soft enough for you to be able to break it up to measure it out. We are going to use a quarter of cup right now in our egg mixture and you really want to pack it down into the measuring cup. You want to get as much sugar in there as you can because the measurements for brown sugar are packed not scooped. You got it out in a nice cup shape and let's cover that back up so that it doesn't get any harder. You are going to use half a cup of the cream. Remember I said originally that you are going to have the whole pint which is two cups of cream. For the eggs right now, you are just going to add a half cup of it. Now because it is a smaller amount, just a half cup you can use a half cup measuring cup instead of a glass measuring cup. Then along with that we are going to add half teaspoon each of cinnamon and then ginger; take that lid off of there. This is going to make the ice cream to have lots of nice spice to it. Because pumpkin is traditionally used in the Fall and we have lots of spices with it such as for pumpkin pie, we want to carry that over into the ice cream that we are making as well. Then half a cup of ginger; I'm sorry half a teaspoon. Didn't even think about adding half a cup. That would be way too much. Then we are going to add some nutmeg. Just a little sprinkle. If you happen to have fresh nutmeg, then you will want to freshly grind it and then we are also going to add just a touch of salt. This will help even out the sweetness just a little bit; a quarter of a teaspoon. Then we are going to whisk this all together making sure those yolks are broken up until you have a nice smooth yellow consistency. You want to make sure that all of those spices are mixed in the glass bowl. Just want to mix it up and make sure there aren't too many lumps and then we are ready to move on to our next step. "
