"Hi, I'm Jennifer Cail. On behalf of Expert Village I'm going to show you how to make this delicious refreshing eggnog ice cream. Now that all of our ingredients have been added and our custard has been cooling in our water bath. It's time to cool it even further for this we are going to need to put it in the refrigerator. First we want to get some plastic wrap you might want to be tempted to put your cool custard into a resealed plastic container. But plastic wrap is going to work much better and I'll explain why. If you just cover it like this then you are going to risk forming a skin on top of the custard. So what you want to do is put the plastic wrap in so that it is touching the surface of the custard. You want to be careful that it's not sticking to your bowl too much while you are trying to put this in and you want to just want to get this down. This will help ensure that you don't get the skin on the custard if it does form a skin it's not a huge deal it's just going to be something that you have to skim off before putting it into the ice cream maker. So you want to get a surface as covered as completely covered as possible if you have a couple of air bubbles in there it's no big deal. Then you want to make sure that the plastic wrap is fully touching the edges of the bowl as well as you get a nice tight seal and then it's time for the next step."
