"Hi, I'm Jennifer Cail and on behalf of Expert Village, I'm going to show you how to make this delicious, refreshing Eggnon Ice Cream. Now that our Custard has been cooked and strained into a bowl, we want to cool it down rapidly while we're adding other ingredients. So what we are going to do is put it into an ice bath and this is where the stacking bowls come in handy. You?re just going to put some ice cubes in some water and you don't want it to be too much because you want the bowl to be able to go in there and you?re going to stir your custard in the ice bath to get it to cool down cause we are going to add some more ingredients to it and we don't want it to keep cooking. This is one of the things that the ice bath is going to help prevent because while it still maintains that heat is going to continue to thickening and cooking just a little bit. So having the ice bath is going to allow it to cool down faster and prevent it from"
