"Hi, I'm Jennifer Cail. On behalf of Expert Village I'm going to show you how to make this delicious refreshing eggnog ice cream. Our first step in making our eggnog ice cream is going to be separating out the 7 yolks from the egg whites. We want to make sure that we do this first because once we get going on making our ice cream we are not going to have a whole lot of time to spare. So I prefer doing this over a couple of bowls it's easier to separate the egg whites from the yolks by just going back and forth with the shell. Now something important to remember is that you don't want to waste the egg whites. There are lots of different recipes that you can use them for and so you can see I'm putting them into a containers. Because once the egg whites are combined you can not separate them out again I'm putting them in different containers based on how much I'm going to use. So I know that one recipe that I need to have two egg whites in so I'm going to be separating them out that way. You can see it's a pretty technique you want to be careful when separating out your egg yolks that you do not get a single bit of yolk in with the white. It's perfectly fine to get a little bit of white in with the yolk but any bit of protein from the yolk into the white is going to prevent them from whipping up if this is your goal."
